1 medium head cauliflower
5 strips bacon save the grease
1 cup heavy whipping cream
4 oz cream cheese
2 tbsp sour cream
8 oz cheddar cheese
1 tsp salt
1 tsp black pepper
¼ tsp white pepper
¼ tsp onion powder
¼ tsp garlic powder
Topping:
28 grams Pork Rinds
2 tbsp grated parmesan
2 oz Mozzarella

Let’s Do This!
Chop up and steam the cauliflower for 5-7 minutes or until soft.
Chop your bacon into small pieces. Crisp and remove your bacon, save the grease in the pan.
In the pan, add heavy whipping cream and cream cheese to your bacon grease. Use a whisk to combine.
Once the cream cheese is fully melted add sour cream to the pan, whisk until incorporated.
Incorporate cheddar cheese and whisk until melted.
One melted, add seasonings.
Add cauliflower to a casserole dish, we used an 8x8 dish.
Spread bacon over cauliflower and cover with cheese sauce
Sprinkle the top with mozzarella cheese.
Combine pork rinds and parmesan cheese in a zippered bag. With a rolling pin, crush pork rinds to the desired size. Sprinkle bag contents on top of your casserole.
Broil on high until golden brown, roughly 5 minutes.
