Ingredients:

  • 4 tbsp butter

  • 1 clove garlic

  • 1 cup heavy whipping cream

  • 1/2 cup mozzarella cheese

  • 3/4 cup parmesan cheese

  • 1 lb cooked chicken

  • 1/4 tsp garlic powder

  • a pinch of red pepper

  • salt and pepper to taste

  • 2 medium zucchinis

  • 1 tbsp olive oil

Let’s Do This!

  1. Spiralize your zucchini (not necessary if you buy premade zoodles).

  2. Add butter and garlic to a sauce pan on medium/low heat. Cook until garlic is golden brown.

  3. Add heavy cream, allow it to come up to temperature.

  4. Add mozzarella and parmesan cheese.

  5. Stir constantly until cheese is melted and sauce is thick.

  6. Add cooked chicken to the sauce, continue stirring.

  7. Turn heat down to low.

  8. In a NEW pan, add zucchini and oil. Saute so the zoodes are softened but not squishy.

  9. Serve immediately and enjoy!

*Pro tip: Sauce and zoodles should be stored separately to prevent the sauce from being exposed to extra moisture.
