1.5 c shredded mozzarella
2 oz cream cheese
1/3 c coconut flour
Pepperoni and cheese

Preheat oven at 425F.
Add mozzarella cheese and cream cheese to a microwave-safe bowl.
Microwave for 60 seconds. Stir, microwave for 30 seconds. Cheese should be fully melted and easily combined.
Add eggs and coconut flour. Mix quickly until combined, microwave for 15 seconds at a time if necessary.
Divide dough into 4 equal parts.
Place one portion at a time between 2 pieces of parchment paper roll out dough.
Add desired filling and seal dough around the filling.
Place hot pocket seal side down on a baking sheet lined with parchment paper.
Bake at 425F for 15 minutes.
Let cool for 20 minutes.
