Chicken isn't always the easiest thing to work into a keto diet because of the protein levels, but leg quarters are your best option. In terms of BBQ, they need a crispy skin, a good amount of flavor, and to be juicy. This recipe brings you exactly that!

Let's Do This:

  1. Dry and place thawed chicken in a large bowl

  2. Add olive oil and toss the chicken around to coat

  3. Sprinkle in dry rub.

  4. Toss chicken until evenly coated

  5. Refrigerate until ready to cook

  6. Preheat grill/oven/smoker to 350 degrees Fahrenheit

  7. Cook for about 1 hour, until a thermometer reads 165 degrees Fahrenheit.
