These keto cinnamon rolls are absolutely delicious and are completely nut free. I seriously recommend trying them for a keto friendly breakfast treat that will keep you fueled all morning long!

10 oz shredded mozzarella
3 oz cream cheese
3/4 c coconut flour
½ tsp xanthan gum
½ tsp salt
2 eggs
1 ½ tsp vanilla extract
1 tbsp baking powder
⅓ c erythritol
½ c butter
2 tsp cinnamon
⅓ c erythritol
3 tbsp heavy cream
7 drops liquid stevia
½ tsp vanilla extract
3 oz cream cheese

Preheat oven to 400F.
Add mozzarella and cream cheese to a microwave-safe bowl. Microwave for 90 seconds stirring occasionally until cheese is fully melted.
Add coconut flour, xanthan gum, and salt to the bowl. Microwave for 30 seconds and stir to combine.
Add eggs, baking powder, erythritol, and vanilla. Mix well.
Roll dough out between 2 pieces of parchment paper.
In a small bowl, combine filling ingredients, spread evenly onto dough.
Using parchment paper, roll dough into tube.
Cut off ends to ensure consistent filling. Then cut into 8 pieces.
Bake at 400F for 18 minutes.
In a separate bowl, combine ingredients for frosting with a hand mixer until creamy.
Frost cinnamon rolls while they are hot.
